A year in review

Just realized I haven't posted in awhile. Let me assure you, it's not because I have succumbed to another fad diet. I am sitting under 180 now. Yes, big smiles. Things have worked out better than expected. I have learned to eat well and go to the gym routinely.  Now, I think I'm too skinny. Lol. So I'm trying to eat a bit more and do some weights.My new goal for the year is to maintain some consistency with weight training and not have any love handles. I don't think I ever worked out my obliques in my life!! I 've been carrying these handles for as long as I can remember. I know it's not going to disappear over night and I know there's no such thing as spot reduction. That means I'll have to continue to shed some more body fat. Hopefully if I can get disciplined with weights as I did with this diet I will see great results next year. So let's get started!

Today kicked off with large amounts of protein

Breakfast: 3 eggs scrambled
Lunch: Steak and Chicken fajitas

Dealing with the holidays on Paleo

I have been on the road lately and haven't had time to blog about my paleo progress. But things are settled down now and I will be back in action! Just because I have been on the road doesn't mean that I have caved or given up on the paleo diet. Actually the first month documenting my food intake and just getting into a routine of things made things easier for me. I know how my body does and I know my busy days so I can fit in preparation of meals and grocery shopping.

I think this month and December are probably the toughest for a lot of people. Family dinners and holidays tends to bring back bad habits. I usually tend to fill up on all the healthy stuff before big dinners so I won't be inclined or feel obligated to eat :) Call me weird but it works.

With thanksgiving coming up and Christmas around the corner I will definitely have some holiday paleo experiments to post.

Health Flex: Low Carb Alternative Eggplant Pizza

Was craving some pizza today, so I whipped up some eggplant pizza. Pretty easy to make. Slice it up, turn on the oven to bake and put it in for about 30 mins @ 350. I put it on broil for an additional 10 mins to get it a bit crispy as eggplant is squishy.  My toppings of choice were simple chicken bits and dried tomato basil pesto. Tasted pretty good. I think the eggplant takes some time to get use to. Especially with all these toppings. I had some leftovers that I'll probably bake up for another meal.

Health Flex: Fishy Ideas

Tonight, I baked up some cod topped of with, yes, Mrs. Dash lemon pepper. Yum! The last few times I noticed that there's alot of water absorbed when these are frozen. So after 30 minutes of baking you have a pan full of  water+oils. I usually drain it and turn it on broil for another good 10 minutes so it's a bit crispy. You don't need to bake up cod you can use any fish. Pair it up with some baked asparagus and you're good to go.

p.s. My previous post on low carb spaghetti squash turned out great the next day. I mixed it with some diced up chicken and some tomatoe pesto. OMG. I love it!

Health Flex: Low Carb Alternative - Taco Lettuce Wraps

Who says you can't enjoy tacos anymore? The recipe here is pretty easy. You can use either lean ground beef or lean ground turkey. 

I usually, just take 1lb of either meats. Brown it in a wok for a few minutes. Drain excess oils (important). Then, I pour in 3/4 cup of water into the wok while the meat is still being drained. Throw in some spices. My choice here was some low sodium taco seasoning.  I turned the stove on high for a bit, threw in the ground beef/turkey and then let the meat simmer in there till the water was all absorbed.

That's it! I pulled out some Romaine Lettuce out of the fridge, diced up some tomatoes and onions. Scooped up some of that meat out of the wok right into the lettuce wraps and that was it. It's quick, cheap and easy.

You can experiment with toppings. It would be great to hear how you like to eat your paleo tacos :)
